Nonna's Ricotta Castagnole with Chocolate Amaretto Sauce (e112)
Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti (everyone's grandma), shows us how she makes Italian Ricotta Castagnole. These delicious fried sweet dough balls, take their name from castagne, or chestnuts, because of their chestnut size.
And though a classic Carnavale treat, they are enjoyed year-round.
It’s an easy recipe with options for variation to suit everyone. You will need:
- 2 cups of all-purpose flour
- 1 large egg
- 1/3 cup of sugar
- 1 cup of ricotta (
- 2 tablespoons of Amaretto, vanilla extract, or a flavour of your choic
- 1 tablespoon of baking powder
- zest of an orange
Chocolate sauce:
- 1/2 cup of whipping cream
- 1/2 pound of semi-sweet chocolate chips
- 2 tablespoons of Amaretto, more if you would like a stronger flavour or use essence of your choice
In a standing mixer, combine all the ingredients. Once the dough begins to gather, transfer to a dusted board and knead until smooth. Nonna likes to make homemade ricotta, which is easily made should you wish to try her recipe: ua-cam.com/video/65Da_bXf57k/v-deo.html
Allow the dough to rest for at least 15 minutes, and then begin rolling the balls. Using water in the palm of your hand will help. This recipe yields about 30 balls, but it will depend on their size.
Heat canola oil or alternative oil, ideal for frying. Once hot, begin frying the balls to a golden brown. It will take about 5 minutes. Place on paper towels, to absorb excess oil.
Once cool you can sprinkle with icing sugar or granulated sugar … options are endless, plain, cinnamon sugar, chocolate, and so on. In this video,
they demonstrate a chocolate Amaretto sauce. This is quickly whipped up by heating the cream, melting in the chocolate, and then once fully melted, adding in the Amaretto. Then dip, drizzle, or completely dunk and enjoy!!

    I can't wait to try this recipe. My grandparents came to the US from Calabria many years ago. My grandmother used to make a zucchini salad with charred, crushed mint and red wine vinegar dressing. Do you know about how to make that? I've been trying to find a recipe and never have yet.       Grazie. Sorry. It’s not clearly written. “First, Nonna roasts up 2 cups of almonds at about 325 for approximately 12-15 min. She then chops up half and leaves the rest whole. Nonna uses almonds with the skin on, though some prefer blanched almonds - both are great, use whatever you prefer.”

      It’s a lemon liqueur. You don’t have to use it. You can substitute with lemon syrup / lemon juice and sugar brought to a boil and cooled - if you prefer.
